I love this recipe! It is a bit healthier than the traditional zucchini bread recipes, but with the addition of chocolate, the kids (and anyone else) will never know!
Ingredients!
1/2 c. chopped walnuts (toasted in oven for about 5 minutes at 325)
1 c. all purpose flour
1 c. whole wheat flour
1/4 c. unsweetened cocoa
1/2 t. baking powder
1/2 t. baking soda
1/2 t. salt
3 large eggs (egg substitute can be used here instead)
1 c. sugar
3/4 c. applesauce
1/4 c. vegetable oil
1 t. vanilla extract
1 ounce unsweetened chocolate, melted
2 c. zucchini, grated (about 1 medium zucchini)
Preparation!
1. Preheat oven to 325 and coat a 9 1/4 inch long loaf pan with cooking spray.
2. Whisk flours, cocoa, baking powder, baking soda, and salt in a large bowl.

3. In a medium bowl, whisk eggs, sugar, applesauce, oil, vanilla, and melted chocolate.
4. Pour wet ingredients into dry ingredients and stir until just combined.
5. Fold in walnuts and zucchini.
6. Bake for 50 to 60 minutes, until top is golden and a toothpick comes out clean.
7. Let cool before trying to invert and remove.
